Vitor received his BSc in Food Engineering (University of Campinas, Brazil) and a Master’s in Biotechnology Engineering (AgroParisTech, France) through a dual degree program. During his training, he carried out internships in research laboratories and the R&D sector of start-up companies, particularly in the areas of biochemistry and genetic engineering. His research interests include waste valorisation, sustainable chemistry and the relationship between food and human health.

 

The title of his thesis is “Foods to optimise the colonic microbiome for our lifelong health and wellbeing”, which aims to use in vitro digestion, anaerobic fermentation, and mathematical models to assess the influence of different food compounds in the microbial community that colonizes the human gut.
