Tung Thanh Diep received a Bachelor’s degree of Chemical Engineering in 2009 at Nong Lam University, Vietnam and a Master’s degree in 2014 at UNSW, Australia. Starting PhD in 2018 at AUT, he was granted a Riddet Institute Scholarship in 2019. His doctoral work explores potential nutrition of tamarillo fruit and application of tamarillo in yoghurt development. His work aims to enhance the understanding of nutritional composition of tamarillos and to develop value-added yoghurt with enhanced bio-accessibility of bioactives in tamarillo. Since 2018, he has published 10 peer-reviewed articles with 9 related to tamarillo.
