Project: Hybrid foods – We know that cells attach, modify, and create their extracellular material. However, within a plant-based matrix, the interactions of cells and their environment are unknown. Therefore, by mixing cells with plant proteins, we may study and engineer these interactions and their effect on the organoleptic and nutritional aspects of the hybrid food. In this way, we can provide tangata whenua with healthy food choices that are more environmentally friendly, so that future generations can live happy and healthily in a thriving natural environment. Thesis title: Engineering novel interactions between plant proteins and muscle cells for cultured-met applications.
