I am a Post-doctoral research scientist at the Biomolecular Interaction Centre (UC), studying the biophysics and interactions of proteins towards understanding complex biological systems. I am the co-supervisor of a Riddet PhD student, Amanda Board, and a member of the growing Molecular Foods Team within Ren Dobson’s lab at UC. I am helping to supervise a UC iGEM team, whose project aims to help ‘Feed the Future’ by exploring the production of hypoallergenic milk proteins, using synthetic biology tools.
During my PhD I characterised and compared orthologues of the milk protein beta-lactoglobulin from cows and goats milk, in order to understand the different behaviours of these milks. I have particular research expertise in the use of analytical ultracentrifugation to observe interactions between biomolecules, even in complex mixtures, such as milk.
